Meet The Dietitians On Demand Subject Matter Experts

We are so excited to officially introduce you to the Dietitians On Demand Subject Matter Experts! Courtney, Jan, Juliette, Kimberly, Laura and Margaret are part of a new team devoted to developing cutting-edge content for registered dietitians. Our research has shown that more than anything, our audience wants to learn about current best practice guidelines, the latest research, and how to implement it into your practice. We’re here to deliver just that.
Courtney Lee, MS, RDN, CDN, CLT, CFCS
Courtney consults locally with Dietitians On Demand and also has a virtual private practice, Kitchen Nutrition, LLC. Courtney enjoys equipping dietitians and dietetic interns with the tools they need for professional success so they don’t have to learn the hard way. Courtney enjoys baking, running, and hosting friends and family in her home.
Jan Claussen, MS, RDN, LDN, CNSC

Jan is a Clinical Dietitian at Centennial Medical Center where she specializes in renal disease, renal transplant, LVAD therapies/mechanical circulatory support, nutrition support, weight loss/bariatrics, and general nutrition. Jan graduated from Western Kentucky University in 2013 with a BS in Hospitality Management and Dietetics and from the University of Memphis in 2014 with a MS in Clinical Nutrition. Jan is energized by learning every day about complicated disease states and how nutrition intertwines with the diagnosis, treatment, and prevention (if applicable) of the disease state. She knows the role of SME is one where she can not only do just that, but also share her newfound knowledge with other dietitians and healthcare professionals to keep the field moving forward in showcasing the necessity of nutrition in our daily lives.
Juliette Soelberg, MS, RDN, CD
Juliette completed her combined Master’s and Dietetic Internship at Rush University Medical Center in Chicago, IL and has worked as a clinical dietitian for the last four years. Her experience ranges from long and short-term rehab to outpatient counseling to critical care. Her favorite thing about being a travel dietitian with Dietitians On Demand was the chance to work with so many different dietitians, departments, and hospitals. I love learning about the medical industry and how it ticks. Dietitians have fantastic potential in the acute care setting (as well as the outpatient setting) to make positive changes in their patients’ lives and in their place of employment (whether its short term contract or full time position)! I want to provide dietitians with the most up-to-date information in an easy-to-understand, ultra-accessible way. Evidenced-based practice is not only what makes us dietitians, but it is the most effective and efficient way to become a true asset to your organization and a real advocate for your patients. So let’s get goin!!
Kimberly Gottesman, DCN, RDN, LDN, CNSC
Kimberly is a freelance registered dietitian with a strong background in clinical nutrition and food service management. Her clinical and research interests include neonatology, critical care and weight management. Kimberly recently received her doctorate of clinical nutrition from Rutgers, the State University of New Jersey. She is an educator, a published author, and a volunteer ACEND Program Reviewer. In her spare time, Kimberly likes to run, take yoga classes, travel and spend time with her family and friends. Kimberly is thrilled to be one of Dietitians On Demand Subject Matter Experts and contribute to the professional development of other registered dietitians.
Laura Bartee, RD, LD
Laura has been working in various capacities of weight management for more than five years, including individual and group counseling, pre/post bariatric surgery, and non-surgical weight management. She also has experience in the areas of renal nutrition, acute care, cardiac/pulmonary rehab and general outpatient counseling. Laura has a passion for educating and empowering dietitians. She has been working with the Weight Management Dietetic Practice Group Newsletter, Weight Management Matters since 2014 and currently serves as Editor. She is thrilled to join Dietitians On Demand as a Subject Matter Expert and continue to support the ongoing education of fellow dietitians. Laura is currently finishing her master’s degree in clinical nutrition from The University of Alabama and will graduate in spring 2019. In her personal life she enjoys reading, indoor cycling, and is obsessed with dogs.
Margaret Ling, MS, RD, LD, CNSC
Margaret is a clinical dietitian at Carolinas’s Hospital in Florence, SC with coverage of the CVICU, MICU, and SICU. She wanted to become a Dietitians On Demand Subject Matter Expert for the opportunity to support and empower dietitians across the country for total nutrition care. Empowered dietitians can save the world!
